Chocolate Depression Cake

So this recipe has been sitting in my drafts since May… since the night of the first episode of season 8 of Game of Thrones. I made this “depression cake” to show how I will feel when the show ends, depressed. I don’t know how many of you guys are Game of Thrones fans, but that show ruined television for me. There will never be a greater show!

So, the other reason for the Depression Cake is that one of my co-workers is vegan and I always feel bad that I bring in desserts and she is never able to eat them. In chatting she mentioned this ‘depression cake’ and I thought it would be a nice gesture to make it for her.

Since it was when the G.O.T final season was coming out, OREO made a special G.O.T themed cookie and I wanted to incorporate it in the cake. I said something to my coworker and she informed me that OREO’s are VEGAN! Of all things, OREO’s!

So long story short, all of my staff was able to eat my cake and they were told in advance another depression cake was coming in six weeks, the day after the final episode (and it did!).

Chocolate Depression Cake

Ingredients:

  • 3 cups of flour (I used all purpose)
  • 2 cups of organic cane sugar (I used sugar in the raw)
  • 1 tsp of sea salt (iodized)
  • 6 tbs cocoa powder
  • 2 tsp of baking soda
  • 1 tsp of ginger
  • 3/4 cup of coconut oil; melted and cooled
  • 2 tsp of all natural vanilla extract
  • 2 tbs of fresh brewed coffee
  • 2 cups *minus one tablespoon* room temperature water
  • 2 tbs of white vinegar (you can use apple cider also)

Directions:

  1. Pre-heat oven 375 degrees
  2. Grease 2 9 inch round pans. I use butter and flour for greasing my pans.
  3. In a large mixing bowl of a stand mixer (hand mixer works well too), combine flour, sugar, salt, cocoa powder, baking soda, and ginger, stirring to mix well.
  4. Add melted and cooled coconut oil, vanilla, and lukewarm water. Mix well to combine.
  5. Add coffee and vinegar. Mix well so the vinegar and baking soda react.
  6. Pour batter into greased pans and bake at 375 for about 20 minutes or until a toothpick inserted comes out clean.
  7. Remove and enjoy!
