Easy Pancakes and a Lesson in Driving

20150322_130028-1I am way behind. Honestly, I do not know if I am coming or going! With work and school I feel I do not have any time. Anyway, I made these super easy pancakes the other weekend and they hit the spot. I saw a cute idea on Pinterest where you make the pancakes into a rabbit and use whip cream for the tail, super cute. I did not do that with mine… but they were delicious no matter how they look. I added dark chocolate chips to the batter and it made them even more delectable.

I decided to use the rest of this post and dedicate it to something that I feel I need to discuss: 

Lauren’s Rules of the Road

1. Use your turn signal. Manufacturers went through a lot of trouble to put them on your vehicle.

2. The left lane is for passing; not doing the same speed as the person in the right lane.

3. Stop break checking! Why purposely cause an accident? Move to the right lane and go as slow as you would like.

4. Speaking of speed, I’m not asking anyone to speed…. but please at least do the speed limit. It’s horrible when you see the speed limit is 55 and you are going 40 (in the left lane).

5. Green means go. When you approach a green light, you do not stop and look both ways… you go. Of course after they break and look both ways the light then turns yellow… and then they make the turn and I get stuck at the 3 minute light.

6. When there is a solid line on the road you do not go over or through. The same thing goes for in a parking lot. If the lines are solid, you do not pull through.

7. When a sign says “Lane ends in 1000 feet”, you do not wait till 1000.1 feet to cut the person doing the proper thing off the road.

8. When a stop light says left turn on green arrow only… that means green arrow only; don’t honk at me… I can read!

9. On the same note, when a stop light does not have the arrow to make the turn, you have to yield to oncoming traffic. Many people do not understand this one.

10. Please clean off your entire vehicle before driving after a snow fall.

11. Tractor trailers, you have no business being in the left lane. Also, quit being douche bags on the road blocking people in and not letting people over. Just because you are in a big truck does not make you any more special than the next.

12. People that drive old police vehicles… take off those extra mirrors.

13. Most stop lights have sensors, this means you need to pull all the way up to the line for the sensor to know you are there. I sat through a light three rotations before the person realized they needed to move up to get a green light.

14. PLEASE do not text and drive… I prefer you not to talk and drive without a hands free device. It’s hard enough for most people to drive with two hands and two eyes on the road much less one-handed and blind. Honestly, I am more than a 100% positive that whatever you have to say via text is not as important as someone’s life. Don’t be selfish.

Easy Pancakes

Ingredients:

  • 1 cup flour
  • 1 tablespoon sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • few shakes of cinnamon
  • 1 1/2 tsp vanilla
  • 1 egg; lightly whisked
  • 3/4 (to 1 cup) milk; we use 2%
  • 2 tbs canola oil
  • 1 cup dark chocolate chips (optional)

Directions:

  1. Mix together dry ingredients. Add the wet ingredients and whisk until incorporated. Do not over mix. Stir in chocolate chips.
  2. Heat a skillet over medium heat, spray with cooking spray, and drop 1/4 cup spoonfuls of batter onto skillet. Cook until bubbles form and pop, then flip and cook the other side until you have reached your desired doneness.
  3. Serve hot with real maple syrup, YUM!
