Low Fat Chocolate Chip Muffins

Continuing on my “low-fat” treat kick, I made low-fat chocolate chip muffins the other weekend, that were so moist and delicious. When I decided to use the word moist to describe the texture (as I do for almost all my treats) it made me think of how my friend used to hate that word… how a lot women do not like that word (Lilly on How I Met Your Mother). WHY they hate that word!! I started to think about a synonym I could use to describe these yummy muffins and here is what I came up with (with a little help from Meriam-Webster):

After reading these other adjectives that mean the same or close to the same as moist; I think I will stick with moist. Who the hell wants a soggy muffin? Sorry ladies.

My mom, Duane, and myself had birthdays in the month of September, and we decided to have a joint birthday celebration dinner. Recently she told me she thinks her house is haunted (BAHAHA), so this is what I made her for her birthday:

Ghost catching includes: 3 books (1 bookmarked to the story of the ghost on her road, Famous Hauntings, and Fifty Shades of Grey 2 ), disguises, a bag to catch the ghosts in, and special ghost goo (fresh peach jam). Happy Birthday Mom!

 

Low Fat Chocolate Chip Muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup cake flour (or all purpose)
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 1/3 cup apple sauce
  • 2 egg whites
  • 1 cup vanilla yogurt
  • 1 cup mini chocolate chips

Directions:

  1. Preheat oven to 400 degrees. You have 2 options: Do not line a muffin tray and spray with cooking spray OR line a muffin pan and spray the liners with cooking spray. I experimented three ways; those two, and I lined a muffin pan without spraying and it was a little difficult to peel the liners off.
  2. Whisk together both flours, baking powder, and salt. Set aside.
  3. In a large bowl, stir together: egg whites, applesauce, both sugars, and vanilla. Slowly stir in yogurt.
  4. Add dry ingredients and mix until fully combined. Fold in mini chocolate chips.
  5. Pour batter evenly into your muffin pans.
  6. Bake for 15-20 minutes or until toothpick comes out clean.
