Being the muffin of the site, 90% of my recipes are desserts, but last weekend Duane let me cook dinner and I chose a Chinese Hot and Spicy Chicken (Ma La Tze Gee). This was my first time trying an Asian inspired dish and because I am not sure about my knife skills, Duane helped me out. The dish is spicy but you can alter the amount of hot peppers. I have to say I am quite proud of my dinner!

jeter2wedding-1These past few weeks I have not been able to talk about anything but Derek Jeter’s last game at Yankee Stadium (I’m really behind on posting); as a die-hard Yankee fan and a Derek Jeter fan (we got married in Jeter jerseys) this was a tear jerking moment. For those who aren’t sure of what I am talking about let me paint you a picture: It was Derek Jeter’s last game of his career at Yankee Stadium; they were playing against the Orioles. Going into the 9th inning and the Yankee’s were in the lead 5-2. Girardi decided to keep the tired pitcher in and the Orioles came back and tied it, 5-5. They changed pitchers and closed it out. The Yankees now go into the bottom of the ninth; Girardi couldn’t have played it any better knowing Jeter would be third in the innings batting rotation. First batter, single. Batter two up, and Ellsbury executed a perfect sacrifice bunt advancing the runner to second. Eminem’s “Sacrifice” began to play over the loud speakers and Jeter entered the batter’s box; his last bat in Yankee

Stadium (until Old Timer’s Day). One run would end the game. Now, when it comes to hits, Jeter is an all time hit leader, hitting 3,465 career; so this ending is perfect. The runner on second gets a tremendous lead, Jeter hits the ball and it goes in shallow right field. It is an RBI walk off single; Yankees win it 6-5! What a way to end his career, doing what he does best! CAPTAIN CLUTCH! It was the best day in New York sports that night (Giants won against the Redskins that night too!)

Chinese Hot and Spicy Chicken (Ma La Tze Gee)

Ingredients:

  • 2 lbs of chicken
  • hot peppers; we used 1 Thai Chili, 1 jalapeno, and 2 habaneros
  • 3 scallions
  • about 12 chile de arbol
  • 3-4 tbs canola or vegetable oil
  • MARINADE
  • 1 tbs fresh ground ginger
  • 4 tbs low sodium soy sauce
  • SAUCE
  • 3 tbs light soy sauce
  • 1 cup chicken broth
  • 1/4 cup rice vinegar
  • 2 tbs sugar
  • 1 tsp salt
  • red pepper flakes; to taste
  • garlic powder; to taste
  • 1-2 tsp anise pepper OR *We could not find anise pepper so we bought anise stars, ground them, and mixed with black pepper. Of the 2 tsp the majority was black pepper.
  • 2 tsp sesame oil
  • 2 tbs cornstarch

Directions:

  1. Clean and cut chicken in to chunks, set aside.
  2. Marinate chicken in the soy sauce and ginger mixture for 30 minutes.
  3. Clean and cut scallions in to 1/2 inch pieces. Mince hot peppers.
  4. Blanche chile de arbols. Bring a small saucepan with water to a rolling boil. Remove from burner and add chilies. Use something to keep chilies submerged in the water for 20 minutes or until you are ready to begin cooking. We used the deep fryer basket.
  5. In a medium size bowl, mix together all of the sauce ingredients. You can alter the amount of spices to your taste.
  6. In a wok, heat canola or vegetable oil on medium, and stir fry the scallions and hot peppers for one minute. Add the chicken with the marinade. Cook until the chicken is done and then add your sauce and sesame oil.
  7. In a small glass mix 2 tbs of cornstarch with 4 tbs of cold water, mix together.
  8. Pour the cold cornstarch mixture to your chicken and mix well. This will thicken your sauce.
  9. Once the sauce gets to your desired consistency remove from heat and enjoy!
