Light Chocolate Cupcakes with Whipped Topping

lite cupcakes-4For the past three weeks each dessert I have made is “lighter” in calories and fat; and I am being honest they are for the conscientious eater. After trying the “skinny” muffins I posted the other week, and loving them, I see healthy is delicious. These Light Chocolate Cupcakes, just like the muffins, are butter and oil free. When I first saw this low-calorie recipe I had like ten browsers open, and I accidentally hit “close all”. I searched Pinterest and re-googled the same key words in hopes of finding the link to the recipe; nothing. I vaguely remembered some of the ingredients and I reverted back to my earlier healthy muffin recipe for a little guidance and then ran with it. I have to say, they came out moist, decadent, and just delicious.

I wanted to top them with a dream frosting, but, well I will just leave it at but.

Top your cupcakes off with your favorite low-fat (or not) icing; I topped mine off with a cool whip/pudding mix.

I also recently made a low-fat chocolate chip cookie only using applesauce, whole wheat flour, and egg whites. Those would have made it to the blog, but they were gone before I had time to take pictures…these cupcakes barely made it.

2014090895192342For those of you sports fans out there, I am highly upset with the way the Giants are performing so far this year. Yes I know it is only the second week, but they are not showing any talent. I have no clue to what is wrong with Eli. He should have never done the “Football On Your Phone” commercial last year. It marked his demise. I am hoping this upcoming weekend they will do better against Houston. However, I have no clue which way to go against the line. I hate going against the Giants, I feel like a traitor… but I am tired of losing! Anyone else doing as poorly as I am in their pool or fantasy? This weekend I will have to bake something good… you know to bring them luck! 🙂 Go Giants!

Light Chocolate Cupcakes with Whipped Topping

Ingredients:

  • 1/2 cup cake flour
  • 1/2 cup whole wheat flour
  • 1/4 cup cocoa
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vanilla yogurt
  • 1/2 cup unsweetened applesauce
  • 1 1/2 tsp pure vanilla extract
  • 3/4 cup sugar
  • 1 1/2 tbs cornstarch
  • 1/2 tsp coffee grinds
  • 1/2 cup 2% milk
  • 1/4-1/2 cup mini chocolate chips
  • FROSTING: optional; choose your fave.
  • Cool whip
  • vanilla pudding

Directions:

  1. Spray muffin liner with non stick cooking spray. Do not use liners. Preheat oven to 350 degrees.
  2. In a medium size mixing bowl, whisk together: flours, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In a separate mixing bowl, stir together: yogurt, applesauce, sugar, cornstarch, and coffee grinds. Pour in half of the dry ingredients in to the yogurt mixture and a 1/4 of the milk. Combine.
  4. Pour in the remaining dry ingredients, milk, and chocolate chips. Stir until combined.
  5. Evenly scoop batter in to the muffin pans.
  6. Bake for 18 minutes or until toothpick comes out clean.
  7. Allow cupcakes to sit in pan for 10-15 minutes before moving to a cooling rack.
  8. Once the cupcakes have cooled completely, top with your favorite frosting or whip cream.
  9. Store in refrigerator.

    We like the Giants here too and are bummed. Hope Eli can turn it around soon. Don’t you love it when you make something for the blog and it gets eaten before you can take pictures?! LOL Your cupcakes look good!

      Luckily, Eli redeemed himself these past two weeks; and not only was Thursday a phenomenal win over the Redskins but talk about Jeter’s performance his last appearance at Yankee Stadium, YAY! Oh my goodness I love it when I have an “excuse” to make something again! Thank you they are my new fav!
