July is only a day away and I just can not believe how fast the summer is going. The past few weeks have been eventful, and so is the week to come. At work I helped with a mini Comic-Con at one of the library branches (“selfie” to the right), story times, TAB/Teen Night, and held an impromptu Kids in the Kitchen program. Duane and I had a few barbeques, spent a relaxing Sunday by the pool with friends playing Cards Against Humanity (can’t get enough of this game!), while eating these delicious Baked Glazed Doughnuts, and, we are on our way to New York on Wednesday.

\Without planning, I made 2 dozen of these amazing baked glazed doughnuts over the course of 3 days. I was off Friday so I made a dozen; with the intention of bringing 2 to my friends at their yard sale, then a few for my co-workers, and of course have a few for at home. The next morning, wanting to leave ample time to stop at the yard sale I grabbed all 11. (C’mon a full dozen wasn’t going to make it out of the house). When I opened the container at the yard sale a neighbor came across and asked if I was selling the doughnuts. Caught completely off guard, and it still being “early”, I responded “no”. The neighbor then offered to buy one and still unsure of the proper answer, said “OK”. Looking back, I should have given him a doughnut, but it was morning and I was still not thinking clearly. What was funny was that he suggested going around to different yard sales on the weekend selling doughnuts. I would never do it, but it was a funny picture in my head. So anyway, I brought the remaining seven breakfast treats to work. At 3 o’clock I went in to the break room and there was one left. Knowing I would want it later, I wrapped it up and hid it. Pitiful I know. They were so good. Saturday night I decided to make another dozen to bring over to our friends house on Sunday. We brought over 11 (different scenario, I dropped one this time) and came home with 2.5, and as of now there is 1 remaining for me in the morning. 24 doughnuts 72 hours. Gone.

Baked Glazed Doughnuts

Ingredients:

  • BATTER:
  • 2 cups flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup 2% milk
  • 1/4 tsp lemon juice
  • 2 eggs; beaten
  • 2 tbs butter; melted
  • GLAZE:
  • 2 cups powdered sugar
  • 4-5 tbs 2% milk (depending on desired consistency)
  • 1 tbs unsweetened Dutch cocoa powder
  • 1 tsp vanilla
  • pinch nutmeg
  • pinch cinnamon
  • FROSTING:
  • 1/2-3/4 cup candy melts
  • 1-2 tbs shortening (depending on desired consistency of frosting)

Directions:

  1. Add lemon juice to milk.
  2. Preheat oven to 425. Spray doughnut pan with non-stick spray.
  3. Combine dry doughnut ingredients in large bowl.
  4. Add milk, eggs and butter.
  5. Stir just until well mixed.
  6. Fill each ring of the doughnut pan about 2/3.
  7. Bake about 8 minutes, until tops rebound when pressed.
  8. Leave doughnut in pan for about 5 minutes.
  9. Remove from pan and set on cooling rack.
  10. In a small bowl, make glaze by combining all dry ingredients. Add milk 1 tbs at a time until you reach your desired consistency.
  11. Dip top of doughnut in glaze and all excess glaze to drip off.
  12. Place doughnut on wax paper.
  13. Wait for the glaze to set, then begin making frosting.
  14. Using the double boiler method (picture above) heat candy melts, add shortening 1 tsp at a time until desired consistency is reached. Allow to cool for 2-3 minutes.
  15. Dip top of doughnut in frosting.
